This may well be the ultimate carrot cake. The secret is in the finely grated carrots, which give moisture and natural sugar to the cake, and the spices that tickle the taste buds.
This recipe is for those who don't like carrots and for those who like carrots. It's soft and moist, you don't really taste carrot in it. The orange flavor goes very well with it, this is how I like my carrot cake but you can use vanilla, cinnamon, almond if you like.

According to Sun-Maid, a ¼ cup of raisins contains 130 calories and is primarily a carb source, supplying 31 grams of total carbohydrate, 2 grams of dietary fiber, and 29 grams of sugar. Raisins are naturally fat-free and offer a mere 1 gram of protein. Also being a plant-based food source, they are absent of cholesterol. Raisins additionally contain valuable vitamins and minerals, including calcium, iron, manganese, magnesium, fluoride, and zinc. They also provide potent antioxidant properties related to their resveratrol, anthocyanin, and flavonoid content.
CARROT CAKE WITH RAISIN RECIPE
Ingredients:
➥250g all-purpose flour
➥350g finely grated carrot
➥200g brown sugar (1 cup)
➥4 eggs
➥1¹/₂ tsp baking powder
➥1 tsp baking soda
➥¹/₂ tsp salt
➥180ml vegetable oil (³/₄ cup)
➥1 tbsp orange juice (you can use 1-2tsp vanilla, cinnamon, almond extract instead)
➥3 tbsp orange zest
➥2 tbsp raisin
Pan size: 20cm x 6cm (8" x 2")
Baking T: 170°C (340°F)
Method:
In a large mixing bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
In a medium bowl, beat brown sugar, vegetable oil, eggs, and vanilla until well-combined.
Add the egg mixture to the flour mixture and mix only until combined. Stir in carrots, raisins, and orange zest. Mix until evenly distributed.
Pour the batter into the prepared pan and bake about 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Cool to room temperature.
Notes:
1. Do not over mix the batter
2. Keep an eye when you baking if you see the top is burning before time place an aluminum foil on top as soon as you get a nice brown color.
3. Baking time could be more or less 10- 15 mins. insert a toothpick in the middle of the cake to check. if it comes out clean it's done. If batter sticks on it bake few more minutes.
SO, ARE RAISINS GOOD FOR YOU?
When it really comes down to it, raisins can be beneficial to the body. They are a natural source of quick energy while being convenient and oftentimes proportioned already. The dried variation of grapes is further suggested to contain more nutrient concentrations, though with more concentration also comes with more calories. Further importance is not solely based on the raisin themselves, but rather on what they may be put in, including calorically-dense raisin oatmeal cookies or trail mix. However, everything, including raisins are best in moderation.
