Date and Walnut Loaf Cake

There are so many recipes for date walnut cake. This soft and moist date walnut cake is easy to make and is rich in natural fibers and natural sugar as dates are the superheroes in this cake😋



Ingredients:

➧ 350 gms dates(weighed along with seeds)

➧ 50 gms sugar

➧ 2 large eggs

➧ 225g all-purpose flour

➧ 1 tsp baking powder

➧ ¹/₄ tsp salt

➧ 1 tsp Vanilla extract

➧ 1 tsp coffee powder(optional)

➧ 75-85 gms chopped walnuts

➧ Butter - 100 gms

➧ Hot milk-150 ml



Method:

⏩Start by washing and cleaning the dates.


⏩Dice the dates and chop them into small pieces.


⏩Add 150ml of hot milk to soften the dates. Keep them aside for 15-30 minutes.


⏩Chop the walnuts and set aside.


⏩Start making the cake batter by creaming the butter, sugar, 1 tsp of vanilla extract and 1 tsp of coffee powder. 


⏩Add the 2 eggs and whisk them together.


⏩Now sift in the flour, baking powder, and salt into the batter and whisk until well incorporated.


⏩Add the soften date alongside with milk and whisk.


⏩Now, add the chopped walnut and mix.


⏩Now the cake batter is ready. Transfer it into the baking tin and garnish with well-chopped walnuts.


⏩Bake at 375°F for 60-80 minutes in a preheated oven until a skewer comes out clean. Cool in the tin for 5 mins, then remove to a wire rack.


⏩Now our date walnut cake is ready.
